ABOUT JAPANESE GREEN TEA.

Tea originally entered Japan from China. Since it first appeared it has been enjoyed by monks, samurai warriors, and commoners alike. The way of tea, or cha-no-yu (the tea ceremony), is a dedicated art form, used for relaxation and peace of mind. Much is made of the ceremonial pouring of the hot water over finely powdered matcha green tea, stirring briskly with a chasen or bamboo whisk and serving it under rigorous guidelines of movement to the guests. In the 16th century, tea-drinking was elevated to this art form by the famous tea master Sen no Rikyu.

From early times green tea has been highly valued for its medicinal properties. But in recent years research into the effects of green tea has progressed so far it can now provide scientific confirmation for these. legendary sayings.

THE WAY OF TEA

HOW TO MAKE THE BEST HOT TEA -

  • Warm the teapot
  • Pour in about one teaspoon of tea
  • Boil the water and turn off. Leave for 5 minutes.
  • The water should be hot but not boiling, about 79 to 87 degrees Centigrade (175-190 degrees Fahrenheit).
  • Pour water over leaves. Put on lid
  • Steep for about 1-2 minutes.  Do not steep longer than 2 minutes or the tea will become bitter.
  • Pour all the tea out of the pot.Tea mustn't sit in the water for longer than 2 minutes
  • Add more water and repeat, you can again have tea made from the same leaves. .

REFRESHING ICED TEA -

  • To prepare iced green tea you should use a large Pyrex or heat resistant glass container.
  • Pour hot water over double the amount of tea that you would normally use for hot tea.
  • Fill the container until it is half full. After the tea has steeped for about 2 minutes put ice into the container until it is full, most of the ice will melt almost immediately and dilute the tea to it's proper level.
  • After approximately 1 minute you can strain the tea, pour over more ice and serve.

Preparing iced tea in this way will preserve the taste, aroma, color, and health enhancing qualities of the tea.

Iced green tea is also a refreshing and invigorating drink after any sport or exercise.
